作者|昌正浩 生於大稻埕糧商世家,成長於迪化街,熟悉台灣傳統食材與街頭小吃文化。經營食品加工、餐飲經營與葡萄酒貿易,長年關注台菜演變與味覺記憶。 採訪撰文|傅士玲 散文作家與編輯,專注於飲食文化史的書寫與研究,擅長探討食物與人文、歷史及社會的連結,並記錄飲食文化的變遷與故事。曾任《漢聲雜誌》、《商業週刊》出版,擔任《壹週刊》美食旅遊採訪主任,並於2012至2014年間擔任華府作家協會會長。她譯有《威尼斯共和國》、《偷書賊》、《紙的世界史》等多部重要作品,並著有《蔣公獅子頭》、《台灣豬黑白切》、《趙小蘭傳》等書,文章散見於《商業週刊》、《世界日報》等媒體。
Chris Chang, son of a grain merchant in Dadaocheng, runs businesses in food processing, grain trade, restaurant management, and wine trading. Growing up on Dihua Street, he developed close ties with local eateries and street vendors. Known for his great appetite and easygoing nature, he is a beloved figure in the community. Ema Fu is an essayist and editor specializing in the history of food culture. She has worked at Han Sheng Magazine, Business Weekly Publishing, and served as Head of Food & Travel Reporting at Next Magazine. From 2012 to 2014, she was president of the Washington Chinese Writers Association. Her notable translations include The Republic of Venice, The Book Thief, and The History of Paper, among others. She has also authored several books and contributed articles to major publications such as Business Weekly and World Journal.
《大稻埕滋味》記錄了台北大稻埕豐富的飲食文化,特別聚焦於這個歷史街區獨特的早餐傳統。昌正浩以自身在大稻埕成長的經驗,深刻分享他與街頭小吃及美食文化的緊密連結。傅士玲則透過訪談老店與職人,細膩描繪食材選擇、烹調工藝與代代相傳的經典滋味。
The Taste of DADAOCHENG chronicles the rich culinary culture of Taipei’s historic DADAOCHENG district, with a special emphasis on its unique breakfast traditions. Drawing from his personal memories growing up in the area, Chris Chang shares his deep connection to local street food and culinary culture. Meanwhile, Ema Fu’s interviews with long-standing vendors and artisans offer a detailed look at their dedication to quality ingredients, cooking techniques, and the timeless flavors passed down through generations.
